Ammoniated glycyrrhizic acid is the dried and ground portion of the licorice root. After water extracts the licorice root by neutralization with dilute ammonia to obtain acid. It can be used as a flavoring agent in food items and vitamin or mineral supplements. Used historically for GI complaints, licorice is also used as a flavoring agent in the tobacco and candy industries and, to some extent, in the pharmaceutical and beverage industries today.
